Use jacketed high shear mixer. Preheat to 200F. Dissolve disodium phosphate, sodium citrate, sodium chloride, and potassium sorbate in 85% of the water. Preheat solution to 200F. Preheat oil to 200F. Dissolve the citric acid in 15% of water (room temperature). Mix the PURE-DENT B950 and rennet casein at medium slow speed; add the salt solution.
Mixing time is equipment dependent, but hydration is complete after an elastic and tacky character of a homogeneous blend is noted. Add the heated oil followed by the acid solution and flavoring. Mix at slightly faster speed until oil is thoroughly emulsified within the system. Pour into cheese mold and allow to cool. Refrigerate 24 hours prior to evaluation. |
