Soak the casein in the water at 45 to 55C. for 10 to 20 minutes to swell the grains thoroughly. Then, while stirring the slurry, add the ammonium hydroxide and continue stirring until solution of the casein is complete.
Heat the resin until it is melted and is thoroughly fluid. Slowly add the ammonium caseinate solution to the molten resin with good agitation; then, as the last part of the caseinate solution is added, the emulsion should reverse from a water-in-oil to an oil-in-water type. Then add the balance of water slowly, with constant stirring, to yield a usable emulsion of 62.5% nonvolatiles. |
